Cockle cream

Ingredients:

  • 120 gr of cockles (1 can)
  • 550 gr. Of white asparagus (a can or jar)
  • 200 gr. Of mayonnaise
  • 30 gr. Of extra virgin olive oil
  • Black ground pepper
  • Fresh diced chive

Preparation:

  1. Place a fine mesh strainer on a bowl and strain the cockles. The extracted liquid we save up for later.
  2. In a bowl, put the asparagus in its liquid, the mayonnaise, the oil, the pepper and the cockles’ liquid and mash everything together.
  3. Then place the cream in a saucepan and heat it over medium heat until boiling. You can also heat it in the microwave, in the same bowl where we have made the mixture.
  4. We spread the cream on the plates and on top of that we distribute the chives.
  5. Optional: we can serve it with a strip of cockles on the plate or as a side dish.
